Healthier Macaroni and Cheese: Part 3

Do macaroni and cheese eaters love vegetables? Perhaps that is a good idea for an article. We’ll look into it! For those of us who would like to eat a healthier version of this famous dish, adding vegetables is the way to go. In Part 1, we talked about reducing the fat content of the liquid ingredients of our mac and cheese. In Part 2, we discussed moving to whole-grain pasta for the added fiber content. In our final article of the series, vegetables take center stage.

Simply adding a variety of vegetables can make an otherwise unhealthy macaroni and cheese meal into something your doctor would be proud of. Some vegetables that are not only healthy, but go great with macaroni and cheese are: Various peppers, carrots, broccoli, and spinach. Some of us here at macaroni headquarters also like to add the occasional mushroom. So let’s add those vegetables to our macaroni and cheese and proudly pronounce that we are being healthy and enjoying a great meal at the same time. Oh yes, and don’t forget to tell your nutritionist about what a great effort you are making.
