Mixed Vegetable Soup with Macaroni Cheese

Macaroni and cheese mixed vegetable soup is a nutritious and tasty recipe, which will be liked by all. For this recipe, you will need half a packet of macaroni, a half cup of good quality cheese, two tablespoons of butter, salt and pepper to taste, six cups of vegetable stock (made of cauliflower, cabbage, beans, carrots, onion and water), celery or parsley for garnishing and (optional) corn flour.

Prepare the macaroni as directed on the package. Heat the butter in the soup pan and sauté the macaroni for one minute. Add the vegetable stock and bring it to a boil. Then, you can thicken it with the corn flour, if you prefer a thicker soup. If you wish to keep it a little thinner or clear, you can skip the corn flower and simply add the cheese along with salt and pepper and serve garnished with celery or parsley.
