Mixed Vegetables with Baked Macaroni and Cheese

This baked macaroni and cheese recipe with mixed vegetables tastes delicious and is a treat for veggie lovers. The ingredients are one package of macaroni, two cups of shredded cheddar cheese, half cup of Mozzarella cheese, four tbsp butter, two tbsp flour, two cups of milk, half cup of full cream, two cups of lightly boiled mixed vegetables (carrot, peas, sweet corn, baby corn, mushrooms, cauliflower, French beans), one sliced onion, four to five cloves of garlic, salt and pepper as per taste, one tsp all herbal seasoning and tomato sauce.

Cook the macaroni as directed on the package and set it aside after draining. For a delicious white sauce, melt two tbsp butter in a saucepan on medium. Fry the flour lightly and add the milk and cream slowly by stirring continuously. Add salt and pepper and set it aside. Melt the remaining butter in another pot and sauté the onions till they become translucent. Then, add the minced garlic and stir for one minute. Now, stir fry the boiled mixed vegetables for two minutes and add the prepared macaroni. Afterwards, add the white sauce and shredded cheese. Cook for two minutes and remove from fire.

Preheat the oven to 400 degree F. Grease a baking dish and pour the macaroni sauce mixture in it. Top with the Mozzarella cheese, al herbs seasoning and bread crumbs. Bake for twenty minutes and serve after ten minutes after being removed from the oven. Serve this baked macaroni and cheese with mixed vegetable recipe with tomato sauce.
